As I was deciding on what to prep for lunches for the week I knew I wanted something that would be simple and wouldn’t take a ton of time. I decided on pasta salad since it is so quick and you can change it to be whatever you are in the mood for.
I decided on the ingredients that are below, veggie noodles, black olives, mozzarella, bell pepper, broccoli, red onion, and Italian dressing.

Next it’s just a matter of cooking the pasta and chopping up the veggies.

Finally, put all the ingredients into a bowl and mix it up.

There you have it, nice and easy lunch prep for the whole week. This actually lasted me for about 2 weeks. The one suggestion I have is to bring extra dressing with you and to put it on right before eating as the flavor isn’t always there as you get further into the week.
